
Spicy Prawn & Mango Noodle Salad
A delicious zingy salad that will make you feel alive and refreshed.
Ingredients
For the salad
- 2 Egg noodle nests
- 165 g Raw king prawns
- 2 Spring onions, finely sliced, greens and whites separated
- 1 Mango, peeled and roughly chopped
- 1 Little gem lettuce, shredded
- 0.5 Medium cucumber, finely sliced
For the dressing
- 1 tbsp Soy sauce
- 1 Lime, juiced
- 2 tsp Brown sugar
- 1 tsp Madhūka Powder
- 1 Red chilli, finely chopped
Instructions
- Cook the noodles according to packet instructions, then drain and rinse until cold.
- Heat a frying pan over a medium heat with a drizzle of vegetable oil, and once hot add the sliced spring onion whites and cook for 1-2 mins or until starting to soften. Add in the prawns and cook for a further 2-3 mins on each side or until pink and cooked, then remove from the heat to let cool.
- Mix the noodles, cooked prawns, chopped mangoes, cucumber and lettuce in a bowl. Add the dressing ingredients and stir to combine tasting for seasoning and adding salt if needed. Divide between two bowls then garnish with the dressing and reserved sliced green onions.
