
Warm Kale, Sweet Potato & Halloumi Salad with a Date Dressing
A warming, nutritious super bowl salad that will leave you feeling healthy and satisfied!
Ingredients
For the salad
- 300 g Sweet potatoes, peeled and chopped into large bite-sized pieces
- 100 g Kale, shredded
- 1 Lemon, juiced
- 1 Apple, cored and finely sliced
- 250 g Pre-cooked grains
- 250 g Halloumi, sliced
For the dressing
- 50 g Pitted dates
- 1 tsp Dijon mustard
- 2 tsp Madhūka Powder
- 2 tbsp Extra virgin olive oil
Instructions
- Heat your oven to 200C/180C fan.Line a baking tray with non-stick baking paper, then add the chopped sweet potato. Drizzle with olive oil and season with salt and pepper, then put into the oven for 15-20 mins or until cooked through.
- Soak the dates in hot water for 15 minutes. Drain and roughly chop them.
- Add the kale to a mixing bowl with the lemon juice and massage with your hands for 5-6 mins or until it starts to soften, then add in the sliced apple and pre-cooked grains.
- Heat a non-stick frying pan over medium-high heat and once hot, add a drizzle of olive oil and the halloumi slices. Cook for 2-3 mins on each side or until golden brown and crisp.
- Mix together the dressing ingredients. Serve up the salad between two bowls, top with the fried halloumi and finish with the dressing.
