Cook the noodles according to packet instructions, then drain and rinse until cold.
Heat a frying pan over a medium heat with a drizzle of vegetable oil, and once hot add the sliced spring onion whites and cook for 1-2 mins or until starting to soften.
Add in the prawns and cook for a further 2-3 mins on each side or until pink and cooked, then remove from the heat to let cool.
Mix the noodles, cooked prawns, chopped mangoes, cucumber and lettuce in a bowl.
Add the dressing ingredients and stir to combine tasting for seasoning and adding salt if needed.
Divide between two bowls then garnish with the dressing and reserved sliced green onions.
