Spicy Prawn & Mango Noodle Salad

Ingredients
  

For the salad

  • 2 Egg noodle nests
  • 165 g Raw king prawns
  • 2 Spring onions, finely sliced, greens and whites separated
  • 1 Mango, peeled and roughly chopped
  • 1 Little gem lettuce, shredded
  • 0.5 Medium cucumber, finely sliced

For the dressing

  • 1 tbsp Soy sauce
  • 1 Lime, juiced
  • 2 tsp Brown sugar
  • 1 tsp Madhūka Powder
  • 1 Red chilli, finely chopped

Instructions
 

  • Cook the noodles according to packet instructions, then drain and rinse until cold.
  • Heat a frying pan over a medium heat with a drizzle of vegetable oil, and once hot add the sliced spring onion whites and cook for 1-2 mins or until starting to soften. Add in the prawns and cook for a further 2-3 mins on each side or until pink and cooked, then remove from the heat to let cool.
  • Mix the noodles, cooked prawns, chopped mangoes, cucumber and lettuce in a bowl. Add the dressing ingredients and stir to combine tasting for seasoning and adding salt if needed. Divide between two bowls then garnish with the dressing and reserved sliced green onions.
